the aroma is like a siren song. actually eating the food is like having your bowels shredded upon some jagged, rocky shoals.

Your post title has a very different meaning to someone living in NYC. It suggested that the allure of the smell of dozens of sweaty commuters and human urine was so tempting that you just had to go down into the station and open your nostrils.

The worst part of this is that there was a time (perhaps mid-90s) where subway was actually decent.

In the last few years, however, they just fucking suck. Lately, whenever I've had the misfortune of going to one (usually because a friend wants some), it seems like nothing is fresh and the sandwiches are basically tasteless. They get a couple bonus points for actually having healthy options on the menu, but by and large they really, really dropped the ball.

the healthy options aren't even healthy. nobody actually gets shit with no bread, cheese, or sauces.

Well, not quite.

All their 'healthy' recipes still include bread. Some of the sauces (honey mustard, sweet onion, etc) don't have any fat, although they certainly have calories. As for cheese - yeah, but I often forgo that anyway.

They at least have the right stuff available on the menu to make something reasonably healthy. Compare this to some place like Mcdonald's, where the only way to get something remotely healthy is to order one of the grilled chicken sandwiches without mayo, cheese, etc. The healthy subway shit seems more enticing than what's being sold at most other fast food places (although that's not really saying much given that it's not all that healthy in the first place).
