If a resume came across my desk that listed a job that hadn't started yet, I'd toss it in the trash. Obviously you don't know what a resume is for. It's to show your experience, not the mere fact that someone thinks you have potential.
You handle this by putting in your cover letter something like "I'm looking to do some whatever legal work before I begin my job with PREFTIGIOUS THING this fall"

a resume shows the experience you will bring to them. so, for instance, if you're applying for a summer job and you haven't started your spring job, you can list the spring job and say "beginning February (or whatever it may be)". but, if you're applying for a spring job, and you have a summer job, you don't list the summer job, because you won't be bringing that experience with you.
it's the same reason summer employers will ask you what your spring or fall class schedule is during fall oci - although it's not your experience yet, they want to know what you're going to bring with you.

Disagree strongly.
It's all signaling. They want to see your past jobs to see if you'll be smart enough to handle this one. They want to see your class schedule to see if you're actually a biglaw type or if you're a humanities major hoping to make some quick money.
They're not like, "Oh he's taking Sec Reg! He'll be so helpful with all that valuable knowledge of the hornbook!"
