ok this is my go to and it keeps really well so you can make it ahead for several days:

Boil pasta in a big pot. Slice broccoli and toss it in with the pasta. I like a lot of broccoli but it's up to you. Also I don't like my broccoli overcooked so I wait a few minutes before tossing it in with the pasta but again, up to you. I also use a lot of the stems because otherwise it's wasteful. Stems taste fine.

Drain pasta and broccoli, toss it with butter and a little milk. I like to add paprika and red pepper but that's based on preference. Warm up the milk in the bottom of the pot on low heat for like 20 seconds, then toss in all the cheddar. I also like to add at least one other kind of cheese. String cheese, swiss, fresh parmesan, whatever. Keep mixing it until the cheese is mixed in. Sometimes I turn the fire back to low to make sure the cheese melts but don't overdo the heat or it all melts and turns oily. It's better to just keep stirring.

This makes tons of servings of relatively wholesome homemade mac'n cheese. Great warmed up even in the microwave and keeps for like a week.

Add fruit and/or wine and it goes from a meal to a nice meal.
