Subject: Econ PhD Questions

I'm considering applying for Econ PhD programs next year and I'm curious about how they work and how useful they are for later life. What jobs require or prefer Economics PhDs outside of academia? What subfields of Economics are better for the job market?

And also, if you stay in academia, how easy is it to have multiple research interest and move between subfields?

Lastly, on a more detailed note: I've heard that unlike in the sciences where you publish papers for your PhD with with advisor, in economics you're supposed to publish a paper which is solely your work? Is this true?
