Don't they realize they are hurting their credibility for no good reason? And that they would be better served focusing the court's attention on the part of the case actually in dispute? Is it just to bill extra time?

Because there are dumb clients.
Because there are dumb judges.
Because, sometimes, making the questionable argument forces the judge to either address that argument, or resolve the case on a basis more favorable to you.
Because the other side has fewer resources.
That said, those are not usually good reasons and it usually doesn't help (and might hurt) your case.

it's shit like this that I wonder when I will ever "get it" strategy-wise, in the law
I have seen some pretty far out arguments that actually worked, or were to preserve an argument on appeal. I still have figured out why.
