So this partner has a reputation bad enough that none of the real associates want to work for him. At first I felt grateful for all the responsibility he seemed to be giving me, but partner is never happy with anything, has me billing 50-60 hours a week and working every weekend and has forbidden me from taking other assignments even though I tried to tactfully express that I want to try different practice areas.

Any options here besides keep bending over or no offer?

You're in trouble. The issue isn't about suffering through the summer; you can obviously tough it out for a few weeks. The problem is that this partner is attempting to adopt you for good.... if you allow this to continue, once you start at the firm, you're his bitch.

You have a few options, none of them good. First, evaluate your prospects for other employment--do you have the option to go to the place where you did your 1L summer? Are you a strong candidate for clerkships (i.e., either personal connections or LRev+top 25% at a T14)? If you are, talk to the recruiter about getting you work with other partners.

If you answer "no" to these questions, you need this offer... so you need to reconcile yourself to working for this guy, at least until you are at the firm for a while. This would mean you should do nothing; however, there is a risk with this which you might not be fully appreciating. You say that you can't do anything right with this partner--so what will his review of you look like? Are you sure it will be good? One possibility would be to talk to the partner and say, "I really love working with you and I'm happy to only work for you, but I'm concerned that I might not get an offer if other partners don't know me. Will I be okay?"

By never happy, I meant the assignment is never over - no feedback or even negative commentary most of the time, just "MORE". So the other risk is also that the more I do, the more i help him see new facets of the "assignment" but he still wants it yesterday (even though discrete tasks are always completed within deadlines). Had a decent review but starting to suspect that the more I do, the more his expectations will increase until I am completely unable to meet them and then get no-offered. Better to just quietly disappear?

It's not that hard to talk to the recruiting committee, who can easily reassign to other work. It's the recruiting committee's job to handle summer work assignment issues.
