Updated as in 90s Windsor or new Coyote? You could probably find an explorer with a 5.0 and the updated heads and some eddie bauer power seats as a donor car for less than the price of a crate Coyote.

Either way you should look for a mustang that came with the less desirable options (straight six, auto, whatever) and just rip everything mechanical out. Even if there's nothing inside, a new interior should only run you a few grand - it's really just carpet, seats, door panels, and a console (which is technically optional).

I was thinking getting an engine from Proformance Unlimited (https://www.proformanceunlimited.com )or Roush (almost certainly too expensive though).

I think you'd be better off getting a donor Windsor and putting $1-2k into repairs+tuning it up to ~350 HP if you're thinking of spending 8-10k on just a crate motor, honestly. You should be able to get a clean, straight, mostly rust-free body for 10k - so by the time you have a 10k motor and 2-3k trans installed you're looking at 30k with parts and labor. That's before anything electrical or aesthetic gets installed - but if you're keeping the rest simple that might work for you.
