Most shops will slice the meat in the late evening the day before and then slice the vegetables in the morning. Vegetables won’t stay as fresh as long in the refrigerator, especially onions. Slicing meat in front of you is just an inefficient gimmick. Also, it probably means the meat is more susceptible to being at uneven temperatures for longer which means it could taste less fresh. All of this meat is cooked and packaged and shipped. None of it is made in house. It doesn’t matter when it is sliced. What matters is has it been kept refrigerated and at a constant temperature or has it been slowed to go bad? |
