I love cumin. Cumin and oregano are in a lot of Mexican food and also soups that I like. Oregano is in a lot of Italian and also stews. I'll miss basil and mint, my two favorite fresh herbs.

They don't use cumin, they use caraway seed. They don't use oregano, they use marjoram. Gulash is mainly flavored with paprika, but it can have caraway seed. Almost every euro cuisine uses black pepper to some extent. I had gulyasleves in Budapest a week ago.

Lemons don't and fresh garlic doesn't count either. Chili I'm on the fence about

Basil/Oregano etc can be fresh or dried but they do count

In this hypo, after we choose the three spices, does the world cooperate, or do we have to constantly police every piece of food we eat and fail if we inadvertently eat an extra spice? For example, if I walk into a restaurant and order a burrito, will it automatically come without the non-chosen spices, or do I need to ask for the ingredient list first and then decide if I can eat it?

Yes, I’d take it.

Most aromatics you can just grow or buy without drying (rosemary, thyme, mint, onion, garlic, dill, chives, basil, parsley, cilantro, etc.).

I get salt. My three spices I would take would be black pepper, cumin, and garam masala.
