why do people at big companies take bigger roles at smaller ones

That is often the real tradeoff. At a large, selective company, the surrounding talent pool can be much stronger, the systems are better developed, and even people below you may have deeper expertise than senior people at a smaller firm. Moving down-market can therefore mean gaining authority while losing peer quality, institutional competence, and the chance to learn from unusually capable colleagues.
For some people, that is still worth it because they value control more than intellectual environment. They would rather make the decisions with a weaker team than remain one strong person among many, especially if they believe they can upgrade the talent around them. The danger is that they underestimate how much of their own effectiveness was produced by the large company’s infrastructure, brand, data, recruiting power, and competent support functions.
So the move is best when the smaller company is unusually strong for its size, well-funded, growing, or already attracting high-quality people. It is much worse when the company is merely small, under-resourced, and mediocre, because then the “bigger role” can become managing weaker people inside weaker systems with fewer options. In that case, the title is larger but the actual career platform is smaller.
