I've been effectively carnivore for 16 months, I am my age 21 weight for the last 9 months and can bench 300 pounds.

Carnivore is a very easy self experiment.
I lost 45 pounds in 7 months and I posted my weight chart here 8 months ago to prove it. I was doing NO exercise because the fucking jab destroyed my shoulders and I couldn't lift. I never do cardio.
I recover fast from lifting. I can literally lift every day on a 3 day split and never over train. I went 14 days straight without missing a workout in January.
Got off BP meds.
Lowered my A1C from 5.9 to 4.8.
I can fast effortlessly because I'm a picture of metabolic health.
If I gave up alcohol I'd probably look like a fitness model.

The carnivore diet, like a lot of other extreme diets, work but not for the reasons people think.
Mostly, it's just a mechanism to reduce energy intake. You can't possible eat as many calories when only eating meat so, yeah, you're gonna lose weight.
Also, If you eat dozens or hundreds of different foods in a week and a couple of those are causing inflammation or other health problems, when you cut 99% of them all at once, you'll probably see some immediate health benefits. It's not that you're eating only meat, it's just that you happened to cut out a couple of the really bad foods for you.

I count fasting by hours. I have down:
January - 11 meals, 740 hours of fasting
February - 4 meals, 214 hours of fasting
954 hours of fasting / 24 hours = 39.75 days of fasting
So 15 total meals this year. 2 of those meals came in the same day as another meal (no fast in between), so in other words, I have broken the year thus far up into 13 fasts.

You’re not going to find long term success by fasting or days on end. Eat 1000-1500 calories a day and you’ll consistently lose weight. A 6 Oz chicken breast is 250 calories. An egg white omelette is 200 calories. Mixed vegetables are 50-100.
Eat an omelette for breakfast. Eat a chicken breast or salmons filet for lunch. Eat another chicken breast or salmon filet for dinner along with some vegetables. Mix in a protein shake if you’re trying to preserve muscle mass (250 calories for 50g protein). Just do exactly that for 6 months and report back. It’s not difficult it just takes discipline.

15 large meals of 1500 calories = 22,500 calories
30,000 > 22,500
Also, with the 15 large meals, you’ll never feel hungry whereas with the 120 small meals you will always feel hungry and may in fact killself.

I think, instead of days long fasts you should do ongoing time-restricted feeding. If you can manage 16 off and 8 on or less everyday you'll almost certainly lose weight unless you're eating total garbage. It's simply hard to eat too much if you only have a few hours to eat.
Apart from that look at whole plant based food. You can eat that kind of stuff forever and you'll simply fill yourself up before you have any chance to take in excess energy. That's not to say go all in vegan, just that filling up on vegetables never put weight on anyone.

it's thermodynamics. you cannot gain weight if you are running at a caloric deficit.
but a human body is not like a car where the gas is fuel that is burned whenever it's active. you're right, the body is much more complicated than that. you can have drank a lot of water or taken a huge shit. it's not like your body's weight fluctuates instantly in real time based on consumption and activity. but over time it will. you can't escape it, the science is undeniable.
also, bodies process different calories and foods differently. not everyone is going to get the same caloric energy from the same foods. no one is going to process calories 100% efficiently.
