I would say foie gras but it’s no longer true after hood rich people started putting it on burgers, etc.

Bouillabaisse has humble roots, but is expensive now even in France. It was like €75 per person the last time I was in Nice. And proles aren’t that into seafood.

Also paradoxically, pigeon/squab/quail aren’t eaten by proles. I’d leave Cornish game hens off that list since you can find them at UMC supermarkets.

Frankly, the answer might be as simple a vichyssoise or a cold pea and mint velouté. Really don’t see unprestigious people eating that. (Or, as in Pete Wells’ classic burn of Per Se: “a lukewarm matsutake mushroom bouillon as murky and appealing as bong water”)

I was at a restaurant in Orlando about 8 years ago and I asked the bartender to ask the chef where the fuck they found fiddleheads in Orlando. Pretty much the entire kitchen staff peaked out to see who the fuck at the bar recognized fiddleheads and then the chef came out, told me where she got them, and gave me a bunch more. Never saw them again after that, though.
