Here's why: the yield comes from two places (1) strategy and (2) emissions.
So far every "strategy" is based off returns from lending/leveraged lending or being a LP and getting a cut of trading fees. The same strategies are generally available to everyone. This is why you have many "portals" like harvest all essentially doing the same things, like staking your sushiswap LP tokens and autoharvesting for you.
Because the strategies are similar, defi coins are competing with each other primarily based on emissions and tokenomics. All of these projects have a period at the start where emissions are high, token price is high because emissions are high and it's very profitable to stake in the "suicide pool" if you have the capital to get in and out quickly. Of course, these high emissions eventually tank the coin price and therefore the yield.
This means defi coins generally offer a shitty outlook. For price appreciation over time, TVL needs to grow faster than new emissions. This is very difficult to achieve, because TVL will always shift from older, more established projects with lower emissions to new projects with higher emissions. These coins are in a state of perpetual self-cannibalization. I don't like my ability to pick which ones will outpace BTC and ETH (in fact I sold every single defi coin I had back when they were high once I understood how it all worked). |

They may not be running memecoin farming pools, but they're not untethered from the reality that revenue needs to grow faster than token emissions for the token price to go up long-term. And the only ways to grow revenue are better yield strategies (that can be duplicated by anyone else in a matter of hours) or growing total TVL (and it's only easy to grow TVL with big emissions). COMP and those other coins aren't insulated from the process . . .they still get their users taken by newer, temporarily higher yield projects.
