We got to 170 internal, so I pulled the ribs and wrapped them. I threw on some hot sauce, simple syrup, Worcestershire sauce, and apple cider vinegar.
Now I’m going to let my temp come up to about 275 in the kettle and let these things finish off.

just order takeout ribs you dumbass. it would cost about the same and taste better and you wouldn't waste your day. properly cooking ribs is stuff that people with 4 young kids don't do.

these aren't what people generally refer to with "beef ribs". those are beef back ribs, which are the ribs in a bone-in ribeye. not much meat there.
you want short ribs, which come from plate, i.e. the cows chest.
