I threw on some hot sauce, simple syrup, Worcestershire sauce, and apple cider vinegar. The kettle got pretty hot because it ran out of charcoal and was just burning sticks, but the foil was on so we should be okay. But you can smoke at anywhere from ~225 to 285 and get good results, and the meat starts to get good at like 202-203. I don’t even think the wrap was the issue here, just too hot.
