Here's the thing: Egyptians seemed pretty chill and content to just lounge around the Nile. Granted Ramses 2 had impressive conquests abroad, but on balance the Egyptians were not a war-exporting nation. They seemed a perfectly content civilization for a very long time, to espouse a philosophy of: "Don't mess with us, so we won't have to mess with you." Live and let live, you can say.
Then why did they apparently go against their own chillaxed values by enslaving the Israelites, and what were those Jews doing and getting into that so pissed off their normally docile Egyptian hosts?

It's not. For example, "Moses" is an Egyptian name meaning "is born," which is consistent with the notion that he was adopted by one of the pharaoh's wives.
It seems most likely something happened under Rammeses II reign. He was in charge for 67 years, longer than any Egyptian ruler since Pepi II, which would explain why the entire time the Jews were there they referred to him only as "Pharaoh." It simply never occurred to them there might be another pharaoh, hence no need to actually name the pharaoh they were dealing with.
Rammeses II's first son died mysteriously, which of consistent with the story of Exodus. Although Egyptians did not keep many slaves, they did demand tribute from nearby cities and nomadic tribes. Rammeses II's 13th son Merneptah records defeating the Hebrews in battles, although in the hieroglyphys that record this the Hebrews are listed as a people, not a country like the other people Egyptians conquered. In the same writing for example Merneptah claims to have defeated the Canaanites, but "Canaan" is identified as a geographic location whereas Jews do not have that glyph proceeding their name, suggesting that they may have actually been "wandering" (i.e. nomadic) in the desert at that time, which would again place the exodus as having occurred under Merneptah's father.
There are other little details that give Exodus a veneer of authenticity. For example Egyptians did use straw to make bricks. Exodus gets this right. There are also snake charmers in Egypt today who can hold a cobra and make it stand rigid like a staff, which explains why no one was impressed when Moses did it.
