I think that smoking over a good seasoned wood does enhance flavor, but the species of tree, I think that matters like 0-1%, as long as it's a nice hardwood like oak, pecan, etc. Don't smoke meat with conifers obviously, but species is not that important as long as you're using a good smoking wood. |
