EDIT: Piano is fully sufficient as a solo instrument, requires excellent dexterity and memory, and has numerous neurological benefits (although idk how many of those are also accessed by other instruments).

As a pianist, I’d put a vote in for classical guitar.

There are such few opportunities to ever play the piano for anyone; it’s discouraging to toil away for the 30+ hours it takes to perfect something difficult, only to receive maybe three comments of “that was nice” in the end.
