First step is to crack her windows password using RainbowCrack.
Next step is to view her saved passwords. Try
IE PassView, Protected Storage PassView, Mail PassView

Given she is a she, there is a 50% chance she saved her password. If so, you are in, easy peasy. If not, you could try her windows password on her email, but there is a chance it will throw her a 'someone tried to log in from your account' error.
If not, download a keylogger, install, and test. Try Refog Free Keylogger. Testing is important because her AV program may pick it up. Restart at least twice and log in with her credentials, then run a full scan, etc. The idea is to prevent her getting an anti virus popup. If you get one, you can either add an exemption to her anti virus, try a different keylogger, or disable her antivirus. (I usually use a different program, but it is designed for remote setup so I'm suggesting this, easy one.)
If you want to be safer, you can buy hardware keyloggers. They cannot be detected using software, but you'll have to pay and wait for shipping.
Answer the following for better answers:

What OS are you using?
What email provider does she use?
Can you steal her phone easily (and give it back to her of course)?
