Generally there's a little bit of back and forth but it requires less wit and creativity than tinder or dating apps might. Generally you can start to build some banter and attraction just from that and then dinner/drinks go easy.
I'm a big believer in always sitting at the bar with these chicks so a) you don't have to stare at each other akwardly the whole meal, b) you can shoot the shit about stuff happening around the restaurant, make jokes, etc. c) since you're side by side its way easier to touch each other, whisper stuff to each other, etc. Builds sexual tension so by the time you say lets get out of here they can't wait to get to your place.
