" 'After ten years they let you cook the eggs…' That line was from Jiro Dreams of Sushi. Bosses would like to invest in training workers, but they fear the workers will leave them high and dry, unable to recoup their investments. Bosses therefore train workers excessively slowly, keeping them as apprentices in the meantime. Only in the end stages of training do the workers learn how to handle the high-margin items, namely the sushi itself. Furthermore Japanese customers demand high quality, which make it difficult for an incompletely trained worker to open his own sushi bar."

Really though, wtf is so hard about cutting some fish? Why don't these faggots just watch some youtube videos and learn how to do it?

Yeah, but you don't have to be THE BEST SUSHI CHEF IN TOKYO - just competent. There's got to be a better way then just holding your dick for 10 years waiting to be trained.

also you could say the same about law. some of the most elite law students go do doc review for years in NYC and get very little substantive experience. people who have been practicing for years have yet to do a single depo, and it's not like this shit is rocket science.

They should just pay the help more and give them a portion of the profits to ensure loyalty.

sometimes i wonder if at-will employment has hurt young employees more than help. if an employer knew you would stay for 3-5 years they'd probably be more willing to hire someone with less experience

it's like those eastern religions where you have to sweep up the temple for 10 years before they teach you how to breathe.
