Salt does not count as a spice for the purposes of the hypo. Also by "spice" I mean something more expansive, "things in the spice section at the grocer"

I love cumin. Cumin and oregano are in a lot of Mexican food and also soups that I like. Oregano is in a lot of Italian and also stews. I'll miss basil and mint, my two favorite fresh herbs.

They don't use cumin, they use caraway seed. They don't use oregano, they use marjoram. Gulash is mainly flavored with paprika, but it can have caraway seed. Almost every euro cuisine uses black pepper to some extent. I had gulyasleves in Budapest a week ago.
