ive made kimchi twice and sour cabbage once.
PROTIP: don't use pre-minced garlic from the store the preservatives in it will halt the fermentation process.

I make pickles all the time. It's easy as fuck. You take cucumbers, put them in a jar, add saltwater, and wait for about a week.
5% solution of salt by volume and dill, dill seed, and garlic for seasoning turns out great.
