At will employment is the best possible system for workers. Economics 101 tells you that if employers can't fire you, they will be much more reluctant to hire workers because they don't want to be stuck with a payroll they can't afford during inevitable future economic downturns. That's why you have 40-year-old NOWAG virgins still living with their parents in Japan (and why nobody forms baby any more in Japan). Employment contracts in Japan are basically lifetime contracts, so if you're not a Japanese boomer who got your lifetime job in the post-war boom, you're fucked. You'll spend your entire life taking part-time/gig work as a NOWAG virgin living with your parents. You have basically the same story in Italy or Brazil (two other countries with strict employment laws). Yeah, it sucks that you can lose your job any time with no warning, but at least you have a job in the first place.
