I've had success putting on a salt/brown sugar/rosemary/sage/thyme brine on smoked turkeys in the past but haven't roasted this way. Mother in law is DOMINATING the kitchen for thanksgiving to my chagrin, absolutely WALLOPING together some watery bean casserole, bland dressing and overly citrus cranberry sauce. She's very seeet and means we'll. I am RELEGATED to the BRINE, maybe get some BASTING or light GRAVY play. This is 120 as I'm a pretty good cook and prefer to cook and drink by myself and produce gourmet as fuck get all retarded wet and savory $$$$$$$$$$ while others fuss over the kid etc, but please help me preserve the JUICES in the turkey with some suggestions to help around the edges.
