same thing with a lot of the music from the 60s... like, when i hear a Beatles song now, all I can hear is how sloppy it is and how shitty the engineering is.

This isn't quite fair. The beatles were never trained musicians, and TV video has always been awful glossy shit. Some of the most beautiful movies ever shot are from the early 70s, and plenty of perfectly clean music has survived from the 50s and 70s. It's just easy to find bad examples - but listen to what's on the radio in a given day now, and watch the latest Chinese throwaway superhero movie, and tell me we've made progress in 'texture' and visual appeal for all the technological advances we've had to work with.

the beatles had particularly bad sound engineering all the way up until abbey road. but dont extrapolate from that to everything else in that era. listen to jimi's cover of all along the watchtower and it's as well-produced from an engineering standpoint as anything today. the knowledge (setting up mic distances to cancel out phasing, etc.) is just more widespread today.
