It's kind of fun to geek out about getting good MPGs. I've legit broken 40mpg in my Outback, albeit under under super-ideal conditions (long stretches of highways with a 55mph limit).
A lot of it is about the police. I got a DUI 15 years ago, it's just nice to live with as little police scrutiny as possible.
There's some safety considerations as well. Driving is by far the most dangerous thing that most people do on a regular basis.

In the early nineties, Subaru was in trouble. The cars were fine. They ran well enough. But sales had been slumping for years. Subaru was up against giants like Toyota and Nissan. And it was losing. It needed a way to stand out.
Subaru started by hiring a new ad agency, to figure out who was buying their cars. The ad firm went out to a hotspot for Subaru sales – Northampton, Massachusetts. A group of Subaru owners filed into a little room in a shopping mall to answer a few questions, and the researchers noticed something right away. All of them were women and many identified as lesbian.

Plenty of Subarbus around me. Especially the Outback and Foresters. Foresters seem to have an older demographic. Male and female.
The people who drove Volvo 240s in the 80s/90s are the people who drive the Subarus today.
If you asked me to describe a typical Subaru driver, it's upper middle class white people.

Outback was a great combo of made-in-America, can handle shitty weather, reliable, enough power and space without being clownish, stylish without being flashy, decent tech, well under $50k.
I think they still have all that, but libs made them change the 6 cylinder engines to 4 cylinder turbo due to the fraud fuel requirements. People bitched about that but not sure if it's impacted reliability or anything.

The Crosstrek is appealing if you want something as cheap as possible that still can tackle winters & soft off-roading.
The Forester is my least favorite Subaru. It's not that much cheaper than an Outback and the fuel economy is basically the same as an Outback.
I have an Outback and I'm very fond of it.
The Ascent is pretty cr for a 3 row. I rented one off Turo during a trip to the mountains in Colorado last summer and it was perfect for the job. Plenty of space, plenty of power. The turbo engine made a big difference on some of those high altitude roads. I know that naturally aspirated engines (like the 4 cylinder in my Outback) would be struggling on some of those highways.

just dropped my subaru off at dealer for $3500 engine repair. 4-6 weeks.
6 years, 40k miles, leak somewhere in the engine.

It's a horse apiece
When they do a new model you can probably expect a new hybrid powertrain. That sounds nice in theory but I don't think I'd want to be a beta tester for a new Subaru powertrain
If I were in the market for an Outback I'd buy one now and then buy a new one in 5 years
