the thing that would affect flavor the most is probably fat, so that's my guess. if you used a recipe like this https://cafedelites.com/beef-bourguignon/ maybe you rendered the bacon more fully the first time, or had a fattier cut of beef, or inadvertently used more oil/butter. classic dish

the secret is, in your nonstick pan with the eggs, pour a teapsoon or so of water next to the eggs (not on the eggs) and put a lid over the top of it. it will evaporate and the moisture helps even it out so the whites get done and the yolk is still runny

1) it's different degrees, but there's a big difference between a) being a faggot and trying to perfect some dish (i've been that faggot with various dishes) and b) being frustrated that you can't make a decent version of a dish that you think tastes mediocre and that you'd be embarrassed to serve to someone else

2) "just make what you want" and don't follow recipes is some xo next level retard schtick. you have to be a very experienced chef to be able to cook on your own and not follow recipes. the worst advice for someone learning to cook is to tell them not to follow a recipe.

It usually ends up oddly sour or doesn't reduce well enough. One time I added corn starch to thicken it but I added too much so it ended up being a sour tasting light red paste.

I've made various meat sauces/ragus/sunday gravies or whatever, at this point I just don't think it is worth the effort to do a 4 or 5 hour sauce so I just do my slightly cheaty version with some shallots, meat, red wine and tomato puree that simmers a good hour but only really takes like 15 minutes to prepare
