boil them first in very salty water for a few minutes until just tender, then toss them in some kind of fat like melted butter or olive oil, rub any flavor you want on them like more salt, rosemary, pepper, then roast at about 380 until crispy

do a greek lemon potatoes recipe imo. If you want bland style that kenji guy has an oven roasted potato recipe that some swear by. I’m not thrilled with it but he does do a good job getting a good texture

for me it's 450 for 30-45 minutes with a little olive oil salt and pepper. shake em around every 15 minutes. solid and easy as fuck.

the GOAT recipe is english sunday roast potatoes. huge pain in the ass but they're so good.
