Personally it'd have to be Jimi Hendrix or SRV.
Driving south is pretty incredible as an example of what Hendrix could do with a pretty trite pentatonic scale (basically the whole song is a solo). Bold as love starts out relatively simple, but it's amazing when the drums pound down and he goes into this incredible reverse solo that he played forwards and then had played backwards on the tape machine. https://www.youtube.com/watch?v=ZYxfOxjswxc John Mayer's version of this is also amazing.
SRV's live version of littlewing from 1983 shows how unreal he could shred. https://youtu.be/i6G53BMgugo Such a mix of powerful playing with harmonics, vibrato, soulful bends, whammy bar action, sweep picking, wah wah pedal. There's something there for everyone.
