Most Mexican is actually Tex-Mex. Cumin is not used much in Mexican but it's slathered over all taco meat in Tex Mex. Cheese is sparse in Mexican. It's ubiquitous in Tex Mex.

but as for the OP, greek/mideastern. falafel balls would be especially easy to sell as a fast-food item. the whole doner kebab thing that got popular in europe still hasn't gotten much traction in the US.
