Cooked it for 50 minutes on 425 degrees.

Took it out, tried to split it down the middle. The outside were kind of “mushy” the way you want a baked potato to be when you open it, but the middle was hard and didn’t mush up at all. It was super hot though. Tasted fine though.

Did I not cook the potato enough? How do I do this right?

Poke some holes in the YUKON GOLD, then rub with olive oil like some titties on bangbros. Liberally season with salt and pepper. If you’re feeling festive try garlic salt.

Bake YUKON GOLD at 425 for an 1 hr to 1:15 depending on size.

So it's undercooked? Have you thought about maybe cooking it longer to fix this? 425 actually seems high for a baked potato but I guess it depends on your oven. I would go lower heat longer cook time.

Poking holes in the potato is so it does not overcook and pop and get potato all over your oven (yes, this is a real thing that can happen). It does not help the potato cook faster. Aluminum foil helps a potato bake more evenly and is usually good if you want to cook at high heat without making the skin too crispy. None of this will help if you undercooked your potato. Only extra time in the oven can fix that.
