It can be a little intimidating at first, particularly with meats IMO. The idea that you could really wreck something by over- or undercooking something is a bit of a hurdle
I'm a strong proponent of tech like instant read thermometers and sous vide for this reason. The confidence that came from the ability to consistently cook meat correctly was very liberating.
